Wednesday, December 29th: Martha Stewart's Oreo Cheesecake Cupcakes


Well, the second attempt at Oreo cupcakes was much more successful than the first. For the recipe I chose a safe option, Oreo Cheesecake Cupcakes from Martha Stewart. My cupcakes didn't turn out as neat as her pictures but they were tasty so I've deemed them a success.

Flop: Wednesday, December 22nd: Tres Leches (Three Milk) Cupcakes in a Oreo Crust



What a disaster! I tried to get ambitious with this weeks cupcakes and they turned out terrible. I started by making an Oreo crust and lining the muffin tins with it. I then poured the cupcake batter into the Oreo crust and baked the cupcakes. This worked, or so I thought. I continued following the directions for the tres leches cupcakes, which translates to three milk cupcakes. The recipe required a milk glaze poured into the cupcakes, and this is where the cupcake turned into a disaster. The glaze soaked right through the cupcake to the crust making the crust soggy. Eventually it soaked up a bit, but after tasting the cupcake it was clear that the Oreo crust that I thought was somewhat successful was much too thick, and the cupcake really had no hope of succeeding. I should have predicted that the milk glaze would not work well with an Oreo crust, but I guess that's part of the trial and error experience. Lesson learned.

Wednesday December 15th: Pistachio Cupcakes with Raspberry Buttercream Frosting


This Wednesday's cupcake was Pistachio. I couldn't wait to bake some really pretty green cupcakes. I decided upon doing a recipe which called for pistachio pudding mix and chocolate chips on top of chopped pistachios. The only alternation I would make to the recipe is I would cut down on the chocolate chips. I found they could almost over power the pistachio flavour. I did a raspberry buttercream frosting with it and topped them with chopped pistachios and a raspberry. I loved the colours.

Wednesday, December 8th: Eggnog Cupcakes with Eggnog and Rum Frosting


This Wednesday's cupcake was eggnog. I made 24 mini cupcakes and then some regular sized cupcakes with the remaining batter. The cupcake itself was very moist; almost too moist. Although the cupcake had been baked all the way through, there was still a very mushy consistency to these cupcakes that was a little unappealing. The taste however was great! I had the same problem with the eggnog frosting, it did not want to thicken up. This made the frosting fairly difficult to work with. Overall these were not my favourite cupcakes to make, or taste. However, it was extremely surprising the amount of people who were not eggnog fans and really enjoyed them.

I really thought at the beginning of the week that Apple Cider would be this Wednesday's victor, and while it started off strong, Eggnog fans didn't give up. So Eggnog cupcakes it is! Wednesday December 1st: Candy Cane Cupcakes with White Chocolate Peppermint Frosting and Candy Cane Pieces


Well, it's December 1st and the pressure is now on to fit in all your shopping, get-togethers, baking and prepping for the holidays. The best way to remove yourself from the stresses of the season are to enjoy some of the holidays best offerings... and these candy cane cupcakes do the job. The cupcake turned out quite different from my previous experiments. The candy cane topping made a more chewy topping with the rich white chocolate peppermint frosting and a more subtle peppermint cupcake. I think you will enjoy these.

Wednesday November 24th: Banana Pecan Cupcakes With Caramel Cream Cheese Frosting


This week I decided to try a Martha Stewart Banana and Caramel recipe. The cupcakes themselves were easy to make and turned out really nice, however the caramel frosting tested my patience. It took three attempts before I decided to move onto another type of frosting for this particular cupcake. Basically I don't have a candy thermometer and kept burning the caramel in the first recipes. This was not fun to try to clean up!! I replaced the Martha Stewart caramel frosting with a caramel cream cheese frosting that was a lot easier and actually super tasty!

Wednesday November 17th: Lime Cupcakes with Lime Filling and Toasted Coconut Meringue Frosting Topped With Shredded Coconut and Lime Zest

So this week's lime cupcakes were a nice change from the heavier cupcakes we have had in the past couple weeks. The cupcakes will be a hit with anyone who enjoys lime and are pretty simple to make as well. I did not use self rising flour, but instead tried to recreate my own with baking soda, regular flour and salt. I did not use enough baking soda so the cake part came out a lot denser than intended. Some tasters commented they enjoyed the denser cake with the fluffy meringue, others would have preferred the cupcakes to be fluffier, so I guess you can never win them all!

New Poll! Lemon Vs Lime



Sour vs Tangy. You decide. This can go either way again. Lemon was suggested in my "Suggest a Flavour" section, and I think a fair competition would be lime. Is it bad that I want lime to win just so I can play that "put the lime in the coconut" song as I bake next Wednesday? Either way, both cupcakes are going to be a refreshing change from the heavy cupcakes you guys have been voting for. I think my tummy needs a break from heavy, and a sour or tangy aftertaste is just the change we've needed!

Wednesday November 10th: Coffee Butter Walnut Cupcakes with Mocha Frosting

This week's coffee cupcakes turned out pretty good. The only thing I would change was the icing. I ran out of icing sugar and so the frosting was too runny to make 'attractive' cupcakes. Other than that they came out good and were a hit among everyone (even the non-coffee drinkers in the group). It was a extremely easy recipe as I cheated with a box mix, but who doesn't like cutting a few corners sometimes?

Wednesday November 3rd: Chocolate Cupcakes Filled With Mint-Chocolate Ganache and Topped with Mint Buttercream Frosting

This Wednesday's recipe comes from http://cupcakeblog.com/. The cupcakes looked and sounded amazing, and the recipe seemed simple enough. The website is by one woman who creates all these cupcakes herself. The chocolate batter turned out extremely thick which I was not prepared for, and I'm not sure I filled the cupcake trays full enough because they rose and then fell when I took them out of the oven. The majority of my cupcakes turned out like brownies. Regardless, they were still very edible. The ganache was easy to make but the recipe called for me to add chopped mint as one of the last steps, and while I thought it was weird I did it. I ended up picking through it while I filled the cupcakes because some of the pieces were too large. I assumed people didnt want to discover a piece of grassy mint in their cupcake while eating it. The butter cream icing was easy and delicious. I added some green food colouring so that I didn't need anything more to garnish the cupcake with to make it look chocolate/minty. Overall I would say that these "two-bite brownie chocolate mint cupcakes" came out somewhat successfully.

Inaugural Wednesday: Reese's Peanut Butter Cup Baked into a Vanilla Cupcake with Peanut Butter Frosting


Today marks the very first "Cupcake Wednesday", and I must say it's been the most successful Cupcake Wednesday ever! I have been glued to the website 'Bake it in a Cake' for a couple weeks and wanting to take the leap of baking something unexpected into a cupcake. The obvious choice was Reese's Peanut Butter cups because they are delicious and seemed to be an easy product to work with for my first attempt. While the site had examples of baking the cups in a banana or chocolate cake, I chose a basic white (box) cake, and I'm glad I did. Paired with peanut butter frosting and chocolate shavings, the cupcakes were extremely sweet but oh so tasty. A word of advice: don't make them too big.
