Wednesday November 10th: Coffee Butter Walnut Cupcakes with Mocha Frosting

This week's coffee cupcakes turned out pretty good. The only thing I would change was the icing. I ran out of icing sugar and so the frosting was too runny to make 'attractive' cupcakes. Other than that they came out good and were a hit among everyone (even the non-coffee drinkers in the group). It was a extremely easy recipe as I cheated with a box mix, but who doesn't like cutting a few corners sometimes?

Here's how they're made:


Coffee Butter Walnut Cupcakes with Mocha Frosting (makes 24)

Cupcakes:
Betty Crocker's Butter Walnut Cake Mix (prepared with box instructions, but replace water with brewed coffee)

Mocha Icing:
1 cup butter
1 cup sugar
2 egg yolks
4 tsp cocoa
5-6 tbsp brewed coffee
1 1/2 tbsp vanilla extract
4 cups icing sugar

Beat butter and sugar together. Add cocoa. Add egg yolk. Add coffee and vanilla. Mix icing sugar until desired consistency.

Ice cupcakes, top with chocolate covered coffee beans for decoration.
